Yacon Rhizomes. Plant as soon as possible in free draining rich soil 30cm apart and protect early Spring growth from frost. Harvest Yacon tubers in the Winter after frosts have killed the top growth. You will find more rhizomes formed at the base of the stalks (above the tubers) - keep these rhizomes for planting next season!
Yacon is delicious raw or cooked. Can be cooked many different ways or just peel and eat! A bit like a crisp juicy pear. Holds its crispness in stirfries - similar texture to water chestnut.
